1 cup ALBERS® Yellow Corn Meal
1 cup all-purpose flour
1/3 cup granulated sugar

1/2 teaspoon salt

3 tablespoons vegetable oil
1 cup (4 oz.) shredded Monterey Jack cheese
1 can (11 oz.) whole kernel corn drained
3 tablespoons chopped pickled jalapeños

review: This is a very flavorful cornbread. I cut down on the jalapeno a little because I thought that it might be too spicy. However, I think I am going to make it with the full recipe. It is a simple, delicious dish that goes well with just about anything!
