Spinach Bundles with Pistachio Dressing |

tablespoon vegetable oil |
|

| 1 |
tablespoon vinegar |
|
|
| 1 |
teaspoon honey |
|
|
| 1/4 |
teaspoon grated orange peel |
|
|
| 3 |
tablespoons chopped shelled pistachios |

|
| 10 |
cups (3 bunches) fresh spinach leaves |

| 2 |
green onions (tops only) blanched |

instructions |
Blend oil, vinegar, honey and orange peel; stir in pistachios and set aside. Place spinach in 2-quart microwave-safe container; cover with plastic wrap and vent.
Microwave at HIGH (100%) 3 to 5 minutes or until spinach is wilted. Rinse with cold water; squeeze to drain. Divide into 4 bundles. Wrap each bundle with green onion tie. Drizzle with pistachio dressing.

| review: This was fantastic as a side for baked potatoes. The sweet-and-sour tang of the dressing compliments the fresh spinach taste beautifully. I didn't use green onion tops to tie the spinach bundles, as they stayed together without any trouble. I'll definitely make this for company, as it makes for such good presentation! |
