Chicken With Peach Salsa

Fresh fruit salsas add end-of-summer special interest to grilled meats and poultry. The topping is easy to make and has great flavor.

ingredients
2 medium fresh peaches pitted and sliced
2 tablespoons sliced green onion
2 tablespoons chopped fresh parsley
2 tablespoons diced jalapeños
1 tablespoon granulated sugar
4 (about 1 lb. total) boneless, skinless chicken breast halves
1/2 teaspoon salt
1/8 teaspoon ground black pepper
3 tablespoons butter

instructions
COMBINE peaches, green onion, parsley, jalapeños and sugar in small bowl. Cover; refrigerate for at least 1 hour.

SPRINKLE chicken with salt and pepper. Melt butter in large skillet; add chicken. Cook over medium heat, turning once or twice, for 8 to 10 minutes or until chicken is no longer pink in center. Serve chicken with salsa.

review: I grilled my chicken to save calories and fat from cooking in butter. I substituted Splenda and used Carb Clever canned peaches in Splenda instead of adding extra calories from the sugar. This was very tasty and a hit in my home. Give this a try---very easy
