Chicken With Peach Salsa |

| Fresh fruit salsas add end-of-summer special interest to grilled meats and poultry. The topping is easy to make and has great flavor. |

medium fresh peaches pitted and sliced |

|
| 2 |
tablespoons sliced green onion |
|
|
| 2 |
tablespoons chopped fresh parsley |
|
|
| 2 |
tablespoons diced jalapeños |
|
|
| 1 |
tablespoon granulated sugar |
|
|
| 4 |
(about 1 lb. total) boneless, skinless chicken breast halves |

| 1/2 |
teaspoon salt |
|
|
| 1/8 |
teaspoon ground black pepper |
|
|
| 3 |
tablespoons butter |
|

instructions |
COMBINE peaches, green onion, parsley, jalapeños and sugar in small bowl. Cover; refrigerate for at least 1 hour.
SPRINKLE chicken with salt and pepper. Melt butter in large skillet; add chicken. Cook over medium heat, turning once or twice, for 8 to 10 minutes or until chicken is no longer pink in center. Serve chicken with salsa.

| review: I grilled my chicken to save calories and fat from cooking in butter. I substituted Splenda and used Carb Clever canned peaches in Splenda instead of adding extra calories from the sugar. This was very tasty and a hit in my home. Give this a try---very easy |
